Oatmeal Nut Waffles

Ingredients:

  • 1½ cups whole wheat flour

  • 1 cup quick cooking oats

  • 1 cup chopped walnuts

  • 1 tbsp baking powder

  • 1 tbsp cornstarch

  • ¼ teaspoon ground cinnamon

  • ⅛ tsp salt

  • 2½ cups unsweetened almond milk

  • ½ tsp apple cider vinegar

  • 3 tbsp avocado oil

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

Instructions:

1. In a medium size bowl, stir together the almond milk and vinegar; set aside for 5 minutes.

2. In a large bowl, combine flour, oats, walnuts, baking powder, cornstarch, cinnamon, and salt. Mix to blend.

3. Add avocado oil, maple syrup, and vanilla extract to the almond milk mixture and mix well.

4. Stir the wet mix into the dry ingredients. Use a whisk to make a smooth batter.

5. Let the batter sit for at least 15 minutes before making waffles. 

6. Grease the waffle iron well with non-stick cooking spray and prepare your waffles!
